Method

  1. 1

Toast the sesame seeds in a dry frying pan over a medium heat for 3 minutes, stirring, until they smell nutty and begin to pop. Tip onto a plate to cool.

    3 min
  2. 2

Toast the rice flour in the same pan over a low heat for 2 minutes until it smells biscuity and is just pale gold. Cool.

  3. 3

Grind the cooled seeds in a spice grinder until they are a fine, slightly oily powder. Do not go on too long or it turns to paste.

  4. 4

Mix the sesame powder, rice flour and salt in a bowl. Add the honey and sesame oil and rub together with your fingers until it holds when squeezed. Add the water only if it stays crumbly.

  5. 5

Press about 1 tablespoon of the mix firmly into a small mould, or roll into balls and flatten with a fork or the base of a glass.

  6. 6

Turn out and leave to firm up for 30 minutes. Store in a tin for up to a week.
