Method
- 1
Heat the oven to 200°C (180°C fan). Fry the bacon in a large ovenproof frying pan over a medium heat for 4 minutes, until starting to crisp.
4 min - 2
Crumble in your ready made chorizo (see the base recipe) and fry for 7 to 8 minutes, breaking it up, until fully cooked through with no pink left and the edges are crisp.
8 min - 3
Add the onion and jalapeños and cook for 4 minutes until soft.
4 min - 4
Stir in your ready made refried beans (see the base recipe) and the water. Cook for 3 to 4 minutes, stirring, until the beans are loose and steaming hot all the way through.
3 min 30 s - 5
Smooth the top and scatter over the mozzarella and cheddar. Bake for 10 to 12 minutes until bubbling and golden at the edges.
11 min - 6
Serve hot in the pan, with the totopos (see the tostadas and totopos base recipe) and lime wedges for dipping.
Tips
- Frijoles puercos means pig beans, a Northern Mexican party dish of beans cooked with pork products and cheese. Serve it hot.
- The chorizo must be cooked through before the beans go in, because it is raw when you add it.
- Fry the bacon and chorizo until you see rendered fat. That fat flavours the whole dip.
- Serve in the pan in the middle of the table with sturdy totopos, which hold up to a thick dip.
Storing and freezing
Cool within 1 to 2 hours and keep covered in the fridge for up to 3 days. Reheat in a hot oven until bubbling and steaming hot all the way through. Freezing is not recommended because the cheese turns grainy.
Questions
Can I make frijoles puercos ahead?
Yes. Assemble the dip up to the cheese stage a day ahead, cover and chill, then add the cheese and bake for 15 to 18 minutes until steaming hot all the way through.
What can I serve it with?
Totopos are the classic choice, but it is also good with warm flour tortillas, celery sticks or sliced pepper. It works well as a topping for baked potatoes.
Is it very spicy?
It is moderately spicy from the chorizo and jalapeños. Remove the jalapeño seeds for a mild dip, or add a spoonful of salsa taquera for more heat.
