  5. 5

Spoon into an ovenproof dish, cover with the cheese and bake for 12 minutes until bubbling and golden.

  6. 6

Scatter over the pickled jalapeños and coriander. Serve hot with your ready made tostadas (see the base recipe), snapped into pieces.

Tips

  • Cook the chorizo until it releases its red oil, then use that oil to fry the vegetables for extra flavour.
  • Mash the beans well so the dip holds on a tostada and does not slide off.
  • For a quick finish, place the dish under a hot grill for 5 minutes instead of baking.

Storing and freezing

Cool within 1 to 2 hours and keep in the fridge for up to 3 days. Reheat until steaming hot all the way through. Do not freeze with the cheese on top.

Questions

Why are they called frijoles puercos?

Puercos means pigs, a reference to the pork chorizo and rich, messy character of the dish. It is a party favourite in northern Mexico.

Can I use ordinary tortilla chips?

Yes. Choose a plain, thick corn chip for scooping, and check the label if you need gluten free.

Can I make it ahead?

Yes. Prepare the bean and chorizo mixture a day ahead, then top with cheese and bake just before serving.
