Method
- 1
Heat 1 tbsp oil in a pan over a medium heat. Cook the onion for 4 minutes, add the garlic and cumin and cook for 1 minute.
5 min - 2
Add the chicken and 100 ml of your ready made green enchilada sauce (see the base recipe). Cook for 3 minutes, season with salt and let cool for 5 minutes.
3 min - 3
Heat 220°C (200°C fan). Warm your corn tortillas (see the base recipe) in a damp cloth in the microwave for 30 seconds so they bend without cracking.
- 4
Overlap two tortillas by a third and put chicken along one edge, or use one tortilla for a smaller flauta. Roll up tightly and place seam side down on a lined tray.
- 5
Brush all over with the remaining oil and bake for 15 to 18 minutes until crisp and golden.
16 min 40 s - 6
Warm the remaining green sauce. Serve the flautas on shredded lettuce with the sauce and your ready made guacamole (see the base recipe) for dipping.
Tips
- Warm the tortillas well and roll tightly. Cold tortillas crack and loose rolls open in the oven.
- Do not overfill. Too much filling splits the tortilla.
- For deep fried flautas, fry in 180C oil for 2 minutes until crisp. Baking is lighter and easier.
- Secure with a cocktail stick if rolls will not stay shut.
Storing and freezing
Best eaten fresh. Cool leftovers within 1 hour and keep in the fridge for up to 2 days. Reheat in a hot oven until crisp and steaming hot all the way through. Uncooked rolled flautas freeze for 1 month.
Questions
What is the difference between flautas and taquitos?
Flautas are longer, usually made with two overlapped tortillas, while taquitos are smaller single tortilla rolls. Both are rolled and fried or baked.
Can I use leftover roast chicken?
Yes. Shred about 450 g of cooked meat and warm it with the sauce as described.
Can I freeze them?
Yes, unbaked. Freeze on a tray, then bag them for up to 1 month and bake from frozen for about 25 minutes.
Are they dairy free?
Yes. They contain no dairy, and the guacamole base is dairy free too.
