Method

  1. 1

Heat the oven to 220°C (200°C fan). Boil the potatoes in salted water for 15 minutes until soft. Drain well and let them steam dry.

    15 min
  2. 2

Mash the potatoes until smooth, then beat in 80 g of your ready made guajillo adobo paste (see the base recipe), the cheese, the onion and the salt. Leave to cool for 10 minutes.

  3. 3

Wrap the corn tortillas (your ready made corn tortillas from masa harina, see the base recipe) in damp kitchen paper and microwave for 40 seconds, or warm them one at a time in a dry pan, so they roll without cracking.

  4. 4

Put 2 tablespoons of filling on the edge of each tortilla and roll up tightly. Place seam side down on a lined baking tray.

  5. 5

Brush the flautas all over with the olive oil. Bake for 20 minutes, turning once, until crisp and golden.

    20 min
  6. 6

Serve with the lettuce and radish, and spoon over your ready made creamy avocado salsa (see the base recipe).

Tips

  • Warm tortillas are the secret. Cold ones crack the moment you roll them.
  • Use floury potatoes such as Maris Piper for a fluffy filling that holds together.
  • Do not overfill. Two tablespoons per tortilla is enough, otherwise the flautas split in the oven.
  • For a crispier result, fry them in 1 cm of hot oil for 2 minutes per side instead of baking.

Storing and freezing

Keep leftover flautas in the fridge for up to 3 days and reheat in a hot oven until steaming hot all the way through. Freeze unbaked rolled flautas for up to 2 months and bake from frozen for 30 minutes.

Questions

What is the difference between flautas and taquitos?

Both are rolled and crisped corn tortillas. Flautas, meaning flutes, are usually longer and made with larger tortillas, while taquitos are smaller. The names are used loosely in different regions.

Can I make them vegan?

Yes. Swap the cheese for a handful of cooked sweetcorn or a spoonful of mashed black beans. The rest of the recipe is plant based.

Can I fry them instead?

Yes. Fry in about 1 cm of hot oil for 2 minutes per side until golden, then drain on kitchen paper. Baking is lighter and easier.
