Method

  1. 1

Heat the oven to 200°C (180°C fan). Fry the onion in the oil for 5 minutes until soft. Stir through the cooked rice to warm.

    5 min
  2. 2

Warm your ready made refried beans (see the base recipe) in a pan or microwave until hot.

  3. 3

Warm the tortillas for 10 seconds each so they fold easily. Spread each with beans, then add rice and a handful of cheese.

  4. 4

Fold in the sides and roll up into tight parcels. Place seam side down in a baking dish.

  5. 5

Pour your ready made red enchilada sauce (see the base recipe) over the top. Cover with the remaining cheese.

  6. 6

Bake for 15 minutes until bubbling. Drizzle with your ready made lime crema (see the base recipe) and finish with coriander.

    15 min

Tips

  • Spread beans thinly so the burritos close easily.
  • Add pickled jalapeños to the filling for extra heat.
  • Serve with a crisp salad to balance the richness.

Storing and freezing

Keeps 3 days in the fridge. Reheat covered in a hot oven until steaming throughout. Freeze unsauced burritos for 2 months.

Questions

Why are they called mojado?

Mojado means wet, because the burrito is soaked in sauce, like a burrito covered in enchilada sauce.

Can I use gluten free tortillas?

Yes, large gluten free wraps work, but warm them well so they do not crack.

Can I add meat?

Yes, shredded chicken or beef mince cooked with taco spices works well in the filling.
