Method

  1. 1

Warm the carnitas (see the base recipe) in a pan with a splash of water for 4 minutes until steaming hot all the way through.

    4 min
  2. 2

Pour the salsa roja (see the base recipe) into a wide frying pan and heat gently until barely simmering.

  3. 3

Dip a corn tortilla (see the base recipe) in the warm sauce for 10 seconds to soften, then lay on a plate. Fill with carnitas, roll up and place seam side down.

  4. 4

Repeat to make 12 entomatadas, arranging them side by side in a dish.

  5. 5

Heat the oven to 180°C (160°C fan). Spoon the remaining sauce over the top and bake for 10 minutes until hot through.

    10 min
  6. 6

Scatter with queso fresco, onion and coriander, and drizzle with crema.

Tips

  • Dip the tortillas briefly. Too long and they tear, too short and they crack when rolled.
  • Thin the sauce with a little water or stock if it gets too thick during dipping.
  • Serve immediately, as the tortillas soften into the sauce as they stand.

Storing and freezing

Keeps in the fridge for up to 2 days. Reheat covered at {t180} until steaming hot all the way through.

Questions

What is the difference between entomatadas and enchiladas?

Entomatadas use a tomato-based sauce, enchiladas use a dried chilli sauce. They are otherwise similar.

Can I use green sauce?

Yes, that makes enchiladas verdes, which are quite a different flavour.

Can I make them ahead?

Assemble and refrigerate unbaked for up to 24 hours, then bake for 15 minutes.
