Method

  1. 1

Warm your ready made pot beans (see the base recipe) in a small pan with a splash of broth, mashing roughly, until steaming hot all the way through. Keep warm.

  2. 2

Beat the eggs with the salt in a bowl.

  3. 3

Heat the oil in a large non stick frying pan over a medium heat. Cook the onion and jalapeño for 3 minutes until soft.

    3 min
  4. 4

Pour in the eggs and stir gently with a spatula for 2 to 3 minutes, until softly set and no longer runny.

    3 min
  5. 5

Warm your corn tortillas (see the base recipe) in a dry pan or wrapped in foil in the oven.

  6. 6

Spoon a little bean paste and a portion of scrambled egg into each tortilla.

  7. 7

Top with your ready made salsa roja (see the base recipe) and coriander and fold. Serve at once.

Tips

  • Take the eggs off the heat while still slightly glossy. They carry on cooking in the pan.
  • Use a spatula and keep the heat gentle for soft, creamy curds.
  • Spread the beans on the tortilla first so the egg does not make it soggy.

Storing and freezing

Best eaten fresh. Eggs and beans can be kept in the fridge for up to 1 day and reheated until steaming hot all the way through.

Questions

Can I make these tacos ahead?

Warm the beans and make the salsa ahead, but scramble the eggs just before serving. Scrambled eggs turn rubbery if held or reheated.

Are they gluten free and dairy free?

Yes. Eggs, beans, pure corn tortillas and salsa roja contain no gluten or dairy. Fry in oil rather than butter.

Can I add chorizo?

Yes, fry a little homemade chorizo first and scramble the eggs in the same pan. Then it becomes a classic huevos con chorizo taco.
