Method

  1. 1

Heat 1 tbsp of the oil in a large frying pan over a medium-high heat. Brown the beef mince for 6 minutes, breaking it up, then add the onion and cook for 5 minutes until soft.

  2. 2

Stir in the garlic, cumin, oregano and 0.5 tsp salt and cook for 1 minute. Add 100 ml of your ready made green enchilada sauce (see the base recipe), simmer for 3 minutes and take off the heat.

  3. 3

Heat the oven to 200°C (180°C fan). Warm the rest of the green enchilada sauce in a wide pan. Fry each corn tortilla in the remaining oil for 10 seconds a side until pliable.

  4. 4

Dip each tortilla in the warm sauce, fill with the beef and a pinch of cheese, roll up and lay seam side down in a baking dish.

  5. 5

Pour over the remaining sauce, scatter with the rest of the cheese and bake for 15 minutes until bubbling.

    15 min
  6. 6

Top with the pickled red onions and serve 3 enchiladas each.

Tips

  • Cook the beef until the juices have gone and it is browned. Wet filling soaks through the tortillas.
  • Tear a corn tortilla that splits into the dish as a patch. It will disappear under the sauce.
  • Check the beef is cooked right through before filling, then bake until the enchiladas are steaming hot.

Storing and freezing

Cool within 2 hours and keep in the fridge for up to 3 days. Reheat in a hot oven until steaming hot all the way through.

Questions

Can I use turkey or lamb mince instead of beef?

Yes. Turkey mince is milder and needs a little extra oil and salt. Lamb mince gives a richer, gamier filling that suits the tangy green sauce.

Can I make these dairy free?

Yes. Leave out the cheddar and top with sliced avocado and extra pickled onion. The sauce and tortillas are already dairy free.

How do I stop corn tortillas cracking when I roll them?

Fry them for 10 seconds on each side so they soften, then dip in warm sauce straight away. Cold, dry tortillas will crack.
