Method

  1. 1

Heat the oven to 200°C (180°C fan). Warm your ready made green enchilada sauce (see the base recipe) in a wide pan until hot. Warm your ready made shredded chicken (see the base recipe) and mix in half of the sauce.

  2. 2

Heat the vegetable oil in a small frying pan over a medium heat. Fry each tortilla for 10 seconds per side until soft and pliable, then dip in the green sauce in the wide pan.

  3. 3

Fill each tortilla with a spoonful of chicken and a few slices of onion, roll up and place seam side down in a baking dish.

  4. 4

Spoon the remaining green sauce over the enchiladas. Warm your ready made cheese sauce (see the base recipe) until loose, then pour it over the top, in stripes.

  5. 5

    Scatter the mozzarella over everything.

  6. 6

Bake for 15 to 20 minutes until the cheese is melted and bubbling. Top with coriander and serve with Mexican rice.

Tips

  • Quickly frying the corn tortillas stops them tearing when rolled. Do not leave them in the oil for long.
  • Suizas are traditionally topped with crema and melted cheese. A thick cheese sauce gives a similar creamy finish.
  • Find corn tortillas in the world food aisle, or use homemade ones.

Storing and freezing

Cool within 1 to 2 hours. Keeps in the fridge for up to 3 days. Reheat covered at {t180} until steaming hot all the way through, about 20 minutes. Freezes for 2 months, though the tortillas soften.

Questions

Why are they called suizas?

Suizas means Swiss in Spanish. The name comes from the rich dairy topping, which was said to be inspired by Swiss dairy cooking and was first served in Mexico City.

Can I use flour tortillas?

Yes, but corn tortillas give a more authentic flavour. Warm flour tortillas briefly so they roll without cracking.

Can I make them ahead?

Yes. Assemble up to 1 day ahead, covered in the fridge, then bake for 25 minutes until bubbling and hot all the way through.
