  2. 2

Heat a griddle, grill or barbecue until very hot. Brush the cobs all over with your ready made carne asada marinade (see the base recipe).

  3. 3

Grill the corn for 8 to 10 minutes, turning, until charred in places.

    10 min
  4. 4

Brush the hot cobs with lime crema (see the base recipe).

  5. 5

Roll in the crumbled cheese, sprinkle with chilli powder and coriander, and serve with lime.

Tips

  • Pre boil the corn so it is tender and only needs charring.
  • Use a clean brush for the marinade and a separate one for the crema.
  • Add a little salsa macha for extra heat.

Storing and freezing

Best eaten straight away. Cooked corn keeps in the fridge for up to 2 days and should be eaten cold or reheated until steaming hot all the way through.

Questions

What is the difference between elote and esquites?

Elote is corn served on the cob, while esquites is the kernels cut off and served in a cup with the same toppings.

Can I use frozen corn on the cob?

Yes. Defrost fully, pat dry and grill for 10 to 12 minutes, turning, until hot and charred.
