Method
- 1
Put the milk, sugar, bicarbonate of soda and salt in a large wide heavy pan. The wide pan helps the milk reduce faster and the soda stops it curdling.
- 2
Heat gently, stirring, until the sugar has dissolved, then bring to a gentle simmer. Do not let it boil hard.
10 min - 3
Simmer for about 1 hour 30, stirring every 10 minutes at first, until the milk has turned pale tan and reduced by about two thirds.
90 min - 4
Stir constantly for the last 15 minutes, scraping the base. It is ready when it turns the colour of toffee and a line drawn across the base of the pan stays open for a second.
15 min - 5
Stir in the vanilla and take off the heat. It will thicken more as it cools.
- 6
Pour into a clean jar. Keeps in the fridge for 2 weeks.
