Boil the eggs for 8 minutes, cool in cold water and peel. Prick each egg a few times with a fork so the sauce can get in.
8 min - 2
Heat 1 tbsp of the mustard oil in a frying pan. Roll the eggs in the first 0.5 tsp turmeric and fry for 3 to 4 minutes, turning, until golden and blistered. Lift out.
3 min 30 s - 3
Add the remaining 2 tbsp oil to a heavy pan. Fry the onions for 10 minutes until golden.
10 min - 4
Stir in the ginger garlic paste, cumin, ground coriander, chilli powder and second turmeric for 2 minutes. Add the tomatoes and cook for 5 minutes until soft and oily.
7 min - 5
Add the potato, green chillies, salt and hot water. Cover and simmer for 12 minutes, until the potato is tender.
12 min - 6
Slide the eggs in and simmer uncovered for 5 minutes, until the sauce is thick and clinging. Scatter with coriander and serve with rice or paratha.
