Method
- 1
Mix the yoghurt, ginger garlic paste, chilli powder, turmeric, salt and lemon juice. Coat the chicken and leave for at least 1 hour, or overnight in the fridge.
60 min - 2
Blend one onion with a splash of water to a paste. Slice the other very thinly.
- 3
Melt the ghee in a wide heavy pan. Fry the sliced onion for 10 minutes until deep golden, then lift out and set aside for the topping.
10 min - 4
In the same ghee, fry the cardamom, cinnamon, cloves and bay leaves for 30 seconds. Add the onion paste and cook for 8 minutes, until it turns golden brown. Stir in the sugar for 1 minute so it darkens.
8 min - 5
Add the chicken with all its marinade and fry for 10 minutes, turning, until sealed. Stir in the cumin and coriander. Pour in the hot water, cover and simmer on a low heat for 25 minutes.
25 min - 6
Uncover and cook for 10 to 15 minutes more, until the gravy is thick, dark and glossy and the oil rises at the edges. Stir in the garam masala and top with the fried onions. Serve with polao or paratha.
