Method
- 1
Peel the potatoes and grate them on the fine side of a box grater. Tip into a sieve and squeeze out as much liquid as you can with your hands. Pour off the liquid, keeping the white starch at the bottom of the bowl, and add that starch back to the potato.
- 2
Mix in the onion, egg, potato starch, salt and pepper until it forms a thick, wet batter.
- 3
Heat about 3 tbsp oil in a large frying pan over a medium high heat. Spoon in tablespoons of mixture and flatten slightly to make pancakes about 8 cm across.
- 4
Fry for 3 to 4 minutes each side, until deep golden and crisp at the edges. Do not rush them or the middles stay raw. Add more oil as needed.
3 min 30 s - 5
Drain on kitchen paper and keep warm in a low oven while you fry the rest.
- 6
Serve straight away with soured cream and dill.
