Method
- 1
Heat the oven to 200°C (180°C fan). Boil the potatoes and carrot in salted water for 6 minutes, add the cauliflower for 3 minutes more, then drain well.
9 min - 2
Heat the oil in a large pan over a medium heat and fry the onion for 6 minutes until soft. Add the cumin and coriander and cook for 30 seconds.
6 min - 3
Pour in your ready made curry base sauce (see the base recipe) and simmer for 8 minutes until very thick. Stir in the vegetables, peas and salt.
8 min - 4
Spoon the filling into a 1.5 litre pie dish and let it cool for 15 minutes so the pastry does not go soggy.
15 min - 5
Lay the pastry over the dish, trim and press the edges to seal. Cut a small slit in the middle and brush with oat milk.
- 6
Bake for 30 minutes until the pastry is puffed and deep golden. Rest for 5 minutes before serving.

Tips
- The filling must be thick. If it is runny, simmer it for a few more minutes before adding the pastry.
- Cool the filling first, otherwise the pastry steams and goes flat.
- Check the pastry label. Many all-butter puff pastries contain dairy.
Storing and freezing
Keeps 3 days in the fridge. Reheat at {t180} for 20 minutes until steaming hot all the way through. The baked pie freezes for 1 month.
Questions
Can I use shortcrust instead of puff?
Yes. Shortcrust gives a crumblier lid. Check the label to be sure it is vegan.
Is the pie gluten free?
No, puff pastry contains wheat. Use a gluten free ready made vegan puff pastry for a gluten free pie, and check the label.
Can I make the filling ahead?
Yes. Make it up to 2 days in advance and chill, then top with pastry and bake.
