Method
- 1
Warm the cajeta in a small bowl over hot water until pourable. Whip the double cream with the icing sugar and half the cinnamon to soft peaks. Chill.
- 2
Mix the caster sugar with the rest of the cinnamon on a plate.
- 3
Spoon your ready made churro dough (see the base recipe) into a piping bag with a large star nozzle. Heat the oil in a deep pan, no more than one third full, to 180 degrees C.
- 4
Pipe the dough into the oil and snip into 3 cm bites with oiled scissors. Fry in batches for 2 to 3 minutes, turning, until deep golden.
3 min - 5
Drain on kitchen paper and toss in the cinnamon sugar. Divide ice cream between 4 glasses, add churro bites, drizzle with cajeta and top with a spoon of cream.
Tips
- Freeze the glasses for 15 minutes first so the ice cream melts more slowly.
- Fry the bites last and assemble at once; warm churros against cold ice cream is the point.
- Read the ice cream label if you need to avoid nuts or egg.
Storing and freezing
Assemble just before eating. Plain fried churro bites keep 1 day in a tin; the cajeta keeps for weeks in its jar in the fridge once opened.
Questions
Can I make the churro bites ahead?
Fry them up to 3 hours ahead and re-crisp for 4 minutes in a {t200} oven just before serving.
What ice cream works best?
Plain vanilla or dulce de leche ice cream. Cinnamon ice cream is also excellent.
Can I use chocolate sauce instead of cajeta?
Yes, any thick sauce works. Warm chocolate sauce or salted caramel are good swaps.
