Beef and Bean Burrito Bake
Mild spiced beef and beans rolled into tortillas and baked under melted cheese, a fun dinner for little hands.

Heat the oven to 190°C (170°C fan). Heat the oil in a large pan and brown the mince for 6 minutes, breaking it up.

Add the onion and cook for 4 minutes. Stir in the cumin and paprika.

Add the tomatoes, beans, sweetcorn and salt. Simmer for 10 minutes until thick.

Put a third of the cheese into the mixture. Spoon a stripe of filling down each tortilla, roll up and lay them seam side down in a baking dish.

Spoon any leftover sauce over the top and scatter with the rest of the cheese.

Bake for 20 minutes until the cheese is golden and the edges are crisp.
