Method
- 1
Grease a 20cm square tin and line it with baking paper. Sift the bicarbonate of soda into a small bowl and keep it beside the hob with a whisk.
- 2
Put the sugar, golden syrup and water in a large, deep saucepan. The mixture will foam up to four times its size later, so do not use a small pan. Heat gently, stirring, until the sugar has dissolved. Then stop stirring.
- 3
Boil for 6 to 8 minutes until it is a deep golden brown. If you have a thermometer it should read 150C. A drop in cold water should snap hard.
7 min - 4
Take the pan off the heat. Tip in the bicarbonate of soda and whisk for 2 seconds only. It will foam up and turn pale.
- 5
Pour into the tin straight away and do not spread it, or you will knock out the bubbles. Leave to set for 1 hour.
- 6
Break into chunks with a rolling pin. Store in an airtight tin, as it goes sticky in damp air.
