Method

  1. 1

Put your ready made homemade Mexican chorizo (see the base recipe) into a cold non stick frying pan. Cook over a medium heat for 8 to 10 minutes, breaking it up, until browned and cooked through with no pink left.

Beat the eggs with the salt and pour them over the chorizo. Turn the heat to low and stir gently for 2 to 3 minutes until just set but still soft and glossy.

Warm the tortillas in a dry pan for 30 seconds each side.

  6. 6

Scatter the coriander over the eggs and serve straight away with the beans and tortillas.

Tips

  • Cook the eggs on a low heat. High heat makes them rubbery and tight.
  • If the chorizo leaves a lot of fat, spoon a little off before adding the eggs for a lighter dish.
  • Serve with a squeeze of lime and any spare salsa for extra heat.

Storing and freezing

Best eaten straight away. Leftovers keep in the fridge for 1 day once cooled within 1 hour, and must be reheated until steaming hot all the way through.

Questions

Can I add potato or cheese?

Yes. Fried diced potato is the classic papas con chorizo twist, and a handful of grated cheese melted in at the end is common too. Add potato before the eggs.

How do I stop the eggs turning grey?

Cook on a low heat and take them off while still slightly wet, because they carry on cooking in the pan. The red fat from the chorizo also gives them their colour.

Is it dairy free?

Yes, as written. There is no milk or butter, only chorizo fat, so it is dairy free, gluten free (with 100% corn tortillas) and nut free.
