Method

  1. 1

Roast the poblanos under a hot grill for 10 to 12 minutes, turning, until blistered and black in places. Put in a bowl, cover with a plate for 10 minutes, then peel off the skin, remove the seeds and cut into strips.

  3. 3

Add the poblano strips, sweetcorn and 300 ml of your ready made green enchilada sauce (see the base recipe). Simmer for 8 minutes until the chicken is cooked through with no pink.

Stir in the cream and simmer for 2 minutes. Do not boil hard.

Warm your corn tortillas (see the base recipe). Serve the chicken in bowls with the tortillas and coriander, or spoon into tortillas as tacos.

Tips

  • Poblanos give the best flavour. If you cannot find them, green peppers plus one fresh green chilli is close.
  • Peel the roasted chillies after steaming in a bowl, as the skins slip off easily.
  • Add the cream off a hard boil, or it may split.
  • Leave out the cream and use a splash more sauce for a dairy free version.

Storing and freezing

Cool within 1 hour and keep in the fridge for up to 3 days. Reheat gently until steaming hot all the way through. Freezing is possible for 2 months, though the cream may separate slightly.

Questions

What are rajas?

Rajas means strips, usually of roasted poblano chilli, cooked with onion. They are a classic filling for tacos and a side dish.

Are poblanos very hot?

No. They are usually mild with a smoky, grassy flavour, though a few can be hotter.

Can I use turkey instead of chicken?

Yes. Use turkey breast strips and cook for the same time until no pink remains.

How do I make it dairy free?

Leave out the cream and add a spoonful of the sauce or a splash of coconut milk if you like extra richness.
