Method
- 1
Slice each chicken breast in half sideways to make 2 thin pieces. Place between sheets of baking paper and bash with a rolling pin until about 1 cm thick.

Put the flour, beaten egg and breadcrumbs mixed with the oregano on three plates. Season the flour well.
- 3
Coat each piece in flour, then egg, then breadcrumbs, pressing the crumbs on.
- 4
Heat half the oil in a large frying pan over a medium high heat. Fry 4 escalopes for 3 minutes on each side until deep golden and cooked through. Keep warm and repeat with the rest.
6 min - 5
Toss the rocket and tomatoes with a squeeze of lemon and a little oil. Season.
- 6
Serve the escalopes on the salad with lemon wedges. The chicken should be white all the way through with no pink.
