Method
- 1
Heat the oil in a large pan over a medium high heat. Fry the chicken for 6 minutes until browned, then add the onion and cook for 5 minutes.
11 min - 2
Add your ready made korma base (see the base recipe). Simmer for 15 minutes, stirring now and then, until thick enough to coat a spoon. Stir in the peas and leave to cool completely.
15 min - 3
Heat the oven to 200°C (180°C fan). Spoon the cold filling into a 1.2 litre pie dish.
- 4
Dust a worktop with the flour and roll out your ready made shortcrust pastry (see the base recipe) to fit the dish. Lay it over the filling, trim and crimp the edges and cut a small steam hole in the middle.
- 5
Brush with the beaten egg. Bake for 35 minutes until deep golden and the filling is bubbling.
35 min - 6
Rest for 5 minutes before serving with rice, peas or a green salad.
Tips
- Make sure the filling is cold before the pastry goes on, or the pastry will go soggy and the lid will sink.
- Reduce the filling until thick. Runny filling leaks and steams the pastry from underneath.
- Bake on a hot tray in the oven so the bottom edges of the dish get heat and the pastry crisps.
Storing and freezing
Cool and refrigerate within 2 hours, eat within 2 days, reheating until steaming hot all the way through. The baked pie freezes for up to 2 months.
Questions
Can I use leftover roast chicken?
Yes. Use about 450 g of cooked chicken and add it to the sauce for the last 3 minutes, then cool as above.
Can I make it ahead?
Yes. Assemble the pie, cover and chill for up to 1 day, then bake from the fridge, adding 5 to 10 minutes.
Can I use a pastry that is gluten free?
Yes, if you make or buy gluten free shortcrust and handle it gently. Use the same filling.
