Method
- 1
Heat the oven to 220°C (200°C fan). Put a large baking tray in to heat.
- 2
Cut the potatoes into chunky chips and soak in cold water for 10 minutes. Drain and dry them very well on a clean tea towel.
10 min - 3
Toss the chips with the olive oil and a good pinch of salt. Spread on the hot tray in one layer and bake for 40 to 45 minutes, turning once, until golden and crisp.
40 min - 4
Meanwhile, warm 300 ml of your ready made onion gravy (see the base recipe) and 250 ml of your ready made cheese sauce (see the base recipe) in separate pans, stirring, until steaming hot all the way through.
5 min - 5
Boil the peas for 3 minutes and drain.
3 min - 6
Pile the chips into bowls. Spoon over the cheese sauce and gravy, and scatter with the peas and spring onions. Eat straight away.
Tips
- Drying the soaked chips well is the secret to a crisp finish. Wet chips steam instead of crisping.
- Keep the sauces hot but not boiling, so the cheese sauce stays smooth.
- Serve the gravy and cheese sauce in separate jugs if some people want only one.
Storing and freezing
Best eaten straight away. Keep any leftover sauces separately in the fridge for up to 3 days and reheat until steaming hot. Do not reheat the soggy chips.
Questions
Can I make these chips in an air fryer?
Yes. Cook the oiled chips at 200C for 18 to 22 minutes in batches, shaking halfway, until golden and crisp. Then add the hot sauces as in the recipe.
Is this dish gluten free?
Not automatically. The gravy is gluten free but the cheese sauce is made with flour, so it is not tagged gluten free unless you make a gluten free version of the cheese sauce.
