Method
- 1
Cut the pressed tofu into 2 cm cubes. Toss gently with your ready made al pastor marinade (see the base recipe) and leave for at least 20 minutes.
20 min - 2
Heat the oven to 220°C (200°C fan). Spread the tofu on a lined baking tray and roast for 25 minutes, turning once, until the edges are dark and crisp.
25 min - 3
Meanwhile, heat a griddle or frying pan until very hot and char the pineapple slices for 2 minutes per side until blackened in places. Cut into chunks.
4 min - 4
Warm your ready made arroz rojo (see the base recipe) in a covered pan with 3 tbsp water until steaming hot all the way through. Reheat chilled rice only once.
6 min - 5
Slice the avocados.
- 6
Divide the rice between bowls and top with tofu, pineapple, avocado, your ready made pickled red onions (see the base recipe), coriander and lime wedges.
Tips
- Press the tofu for 15 minutes under a heavy plate so it takes up the marinade and crisps.
- Roast on a hot tray and do not crowd it, or the tofu steams.
- For tacos, tuck the tofu and pineapple into warm corn tortillas.
Storing and freezing
Cool within 1 hour and refrigerate for up to 2 days. Reheat the tofu in a hot oven until steaming hot all the way through and the rice only once.
Questions
Can I use chicken instead of tofu?
Yes. Use 600 g chicken thighs cut into strips, marinate for 2 hours and roast for 25 minutes until 75C in the centre. The dish is then not vegan.
Is it very spicy?
No. Guajillo and ancho chillies give smoky flavour and only gentle heat.
Is this gluten free and vegan?
Yes. Tofu, the marinade, rice, pineapple, avocado and pickled onions are all plant based and gluten free. Check the tofu label.
