Method
- 1
Score each orange into quarters from top to bottom and peel off the skin with the white pith. Cut the peel into strips about 1 cm wide. Eat the fruit another day.
- 2
Put the peel in a pan, cover with cold water, bring to the boil and drain. Repeat twice more. This takes out the bitterness.
15 min - 3
Dissolve 300 g of the sugar in the 500 ml water in the same pan. Add the peel and simmer very gently, with the lid off, until the strips look translucent and the syrup has thickened, about 1 hour.
60 min - 4
Lift the strips out with a fork onto a wire rack set over a tray. Leave for 2 hours to drip dry.
- 5
Toss the strips in the remaining sugar, then leave on the rack for 6 hours or overnight until dry to the touch.
360 min - 6
Melt the chocolate in a bowl over a pan of barely simmering water. Dip each strip halfway, then lay on baking paper until set, about 30 minutes. Keep in a tin for up to 2 weeks.
