    10 min
  4. 4

Warm your refried beans (see the base recipe) in a pan until steaming hot.

Warm the flour tortillas (see the base recipe) for 20 seconds each side. Spread a line of beans down the middle, add chorizo, potato, cheese, tomato and a squeeze of lime.

  6. 6

Fold in the sides and roll up tightly. Toast seam side down in a dry pan for 1 minute each side.

Tips

  • Warm tortillas bend without splitting. Cold ones crack.
  • Do not overfill. Slightly under filled burritos roll tighter.
  • Wrap in foil to keep warm for the lunch box.

Storing and freezing

Keeps in the fridge for up to 3 days once cooled within 2 hours. Reheat in a hot oven or pan until steaming hot all the way through. Freezes wrapped for up to 2 months.

Questions

Can I freeze the burritos?

Yes. Wrap each tightly in foil once cool and freeze for up to 2 months. Thaw overnight in the fridge and reheat until piping hot.

Can I add egg?

Yes. A scrambled egg in each makes it a breakfast burrito. Cook the egg gently and add it with the chorizo.

Is it dairy free?

Not as written because of the cheese. Leave out the cheese and add avocado for a dairy free version.
