Method
- 1
Make sure your bulgogi marinade, mayonnaise and pickled red onions are ready (see the base recipes). Spoon 40 ml of marinade into a clean bowl for glazing. Keep 20 ml for the mayonnaise.
- 2
Mix the mince with 40 ml of the marinade and 0.5 tsp of black pepper using clean hands. Shape into 4 patties about 2 cm thick, pressing a dimple into the middle. Chill for 15 minutes.
- 3
Stir the 20 ml of marinade into the mayonnaise to make a sauce.
- 4
Heat the oil in a heavy frying pan or griddle over a high heat. Cook the patties for 5 to 6 minutes on each side, until cooked through with no pink and the juices run clear.
11 min - 5
Brush with the clean glaze for the last minute.
- 6
Toast the buns. Build the burgers with lettuce, tomato, the patties, mayo and pickled onions, and scatter with sesame seeds.
Tips
- Use beef mince with at least 15 percent fat so the burgers stay juicy.
- Pressing a dimple into the patties keeps them flat as they cook.
- Burgers must be cooked all the way through. Check the middle is steaming hot and brown.
Storing and freezing
Cool within 1 hour and keep in the fridge for up to 2 days. Freeze raw patties for up to 3 months. Reheat until steaming hot all the way through.
Questions
Can I make the burgers gluten free?
Yes. Use gluten free buns, check the mayonnaise label, and the bulgogi marinade made with tamari is already gluten free.
Can I cook them on a barbecue?
Yes. Cook over medium hot coals for 5 to 6 minutes per side, away from flames, glazing at the end.
Can I swap the beef for pork?
Yes. Pork mince works well. Cook it all the way through.
