Method

  1. 1

Mix the pepper, salt, paprika and garlic granules and rub all over the brisket. If using the oven, brush the meat with the liquid smoke first. Leave for 1 hour at room temperature.

  2. 2

Cook uncovered on a rack in a smoker or barbecue at 120C, or in the oven at 140°C (120°C fan), for 3 to 4 hours, until the outside has formed a dark, firm crust and the meat reads about 85C inside.

  3. 3

Cut the brisket into 3 cm cubes and tip them into a deep foil tray. Add the barbecue sauce, honey, sugar, butter and vinegar and toss everything together so every cube is coated.

  4. 4

Cover the tray tightly with foil and return it to the smoker or oven for 1 hour.

  5. 5

Take the foil off, stir, and cook for a further 45 minutes to 1 hour, stirring once, until the sauce is thick and sticky and the cubes have a glossy, caramelised edge. They should feel very tender when squeezed.

  6. 6

Rest for 10 minutes, then serve piled on a board with white bread, pickles and coleslaw.
