60 gbuttersoftened
200 gmature cheddargrated
2tomatoesthinly sliced
1onionthinly sliced
4 tbspmango chutney

Method

Butter one side of every slice of bread.

Turn four slices butter side down. Spread each with chutney, then add onion, tomato and cheese. Top with the other slices, butter side up.

Heat a griddle pan or barbecue grill over a medium heat. Cook the sandwiches for 3 to 4 minutes on each side, pressing down, until golden and the cheese has melted.
