Method
- 1
Lay the thighs between two sheets of baking paper and flatten gently with a rolling pin to an even thickness of about 1.5 cm. Season both sides with the salt and white pepper.
- 2
Put the flour, beaten eggs and breadcrumbs in three shallow dishes. Coat each thigh in flour, shake off the extra, dip in egg, then press into the crumbs. Lay on a plate and rest for 10 minutes so the coating sticks.
10 min - 3
Heat the oil in a large deep frying pan over a medium heat until a pinch of crumbs sizzles gently, about 170C. The oil should come about 1 cm up the pan.
- 4
Fry the chicken in batches, without crowding, for 5 to 6 minutes each side until deep golden and cooked through. Cut into the thickest one to check the juices run clear and there is no pink.
12 min - 5
Drain on kitchen paper and keep warm in a low oven while you fry the rest.
- 6
Dry the parsley sprigs well and fry them in the hot oil for 20 to 30 seconds until crisp and bright green. Drain, and serve beside the chicken with lemon wedges and potato salad.
