Method
- 1
Heat the oven to 220°C (200°C fan). Mix the flour, baking powder, salt and sugar. Rub in the cold butter with your fingertips until it looks like coarse crumbs with some pea sized lumps.
- 2
Stir in the buttermilk with a knife until you have a shaggy dough. Tip onto a floured surface, pat out to 3 cm thick and fold it in half. Pat out again to 3 cm thick.
- 3
Cut into 6 rounds with a floured 7 cm cutter without twisting. Put them close together on a lined baking tray and bake for 14 to 16 minutes until risen and deep golden.
15 min - 4
While they bake, heat the oil in a wide pan over a medium high heat. Fry the sausage meat for 8 minutes, breaking it up, until browned.
8 min - 5
Sprinkle over the 3 tbsp flour and stir for 2 minutes. Pour in the milk a little at a time, stirring, then add the sage, black pepper and cayenne. Simmer for 6 to 8 minutes until thick and coating the spoon.
7 min - 6
Split the warm biscuits, set them on plates and spoon the gravy over the top. Add a little more black pepper to finish.
