- 3
Bake for 45 to 50 minutes, turning once, until deep golden, crisp and there is no pink inside.
47 min 30 s - 4
Warm your ready made salsa a la diabla (see the base recipe) in a large pan over a medium heat for 3 minutes, until it bubbles and thickens slightly.
3 min - 5
Toss the hot wings in the sauce until glazed.
- 6
Serve straight away with your ready made lime crema (see the base recipe) for dipping, celery batons and lime wedges.
Tips
- Dry skin and the baking powder are the secrets to crisp oven wings.
- Toss in sauce at the last moment, otherwise the crisp skin goes soft.
- Check the largest wing is steaming hot with no pink before saucing.
- Use half the sauce for a milder batch.
Storing and freezing
Cool within 1 hour and keep in the fridge for up to 2 days. Reheat in a hot oven until crisp and steaming hot all the way through. Freeze plain cooked wings for up to 2 months.
Questions
Can I fry the wings instead?
Yes. Deep fry at 180C for 10 to 12 minutes until golden and cooked through, then toss in the sauce.
Can I use drumsticks?
Yes. Bake them for 45 to 55 minutes at the same temperature until the juices run clear.
Why gluten free baking powder?
Some baking powders contain wheat starch. A gluten free one keeps the wings safe for coeliacs.
