Method

  1. 1

Tip your ready made salsa ranchera (see the base recipe) into a wide frying pan with a lid. Bring to a gentle simmer over a medium heat for 3 minutes, until it bubbles and thickens slightly.

  2. 2

Make 4 small wells in the sauce with the back of a spoon. Crack an egg into each one. Season the eggs with a pinch of salt.

  3. 3

Cover and cook gently for 4 to 6 minutes, until the whites are set and opaque but the yolks still wobble. Cook a minute longer for firm yolks.

  4. 4

While the eggs cook, warm the tortillas one at a time in a dry frying pan for 30 seconds each side, then wrap them in a clean tea towel to keep soft.

  5. 5

Scatter the queso fresco and coriander over the pan. Serve straight from the pan with the avocado, lime wedges and warm tortillas for scooping.

Tips

  • Keep the heat low once the eggs go in. A hard boil makes rubbery whites and breaks the yolks.
  • Make sure your sauce is thick enough to hold the eggs. If it is thin, simmer it for 5 more minutes before you add them.
  • Use the freshest eggs you can, as they hold their shape best in the sauce.

Storing and freezing

Best eaten straight away. Leftover sauce without eggs keeps 4 days in the fridge, but do not keep cooked eggs for later.

Questions

What is the difference between huevos ahogados and huevos rancheros?

Huevos rancheros are fried eggs served on tortillas with sauce spooned over. In huevos ahogados, meaning drowned eggs, the eggs cook directly in the simmering sauce, so they pick up more flavour.

Can I make this in the oven?

Yes. Pour the hot sauce into a small baking dish, add the eggs and bake at 190C for 10 to 12 minutes until the whites are set.
