Method
- 1
Make sure your bulgogi marinade and lime crema are ready (see the base recipes). Heat the oven to 200°C (180°C fan).
- 2
Prick the sweet potatoes, put them on a tray and bake for 50 minutes, until soft all the way through.
50 min - 3
Meanwhile, toss the beef with 90 ml of the marinade and leave for 20 minutes. Keep the other 30 ml clean.
- 4
Heat the oil in a frying pan over a high heat. Fry the onion for 3 minutes, then add the beef and fry for 2 to 3 minutes until cooked through.
5 min - 5
Add the spinach and the clean marinade and toss for 1 minute until wilted.
- 6
Split the potatoes open, pile in the beef mix and drizzle with lime crema. Scatter with spring onions and sesame seeds.
Tips
- Microwave the potatoes for 6 minutes to start them off if you are short on time, then finish in the oven.
- Slice the beef thinly so it cooks fast and stays tender.
- Squeeze extra lime over the crema for a brighter flavour.
Storing and freezing
Keep the beef mix in the fridge for up to 2 days. Cool within 1 hour and reheat until steaming hot all the way through. Bake fresh potatoes when needed.
Questions
Can I make it dairy free?
Yes. Leave out the crema, or use a dairy free yoghurt with lime juice. The lime crema base contains dairy.
Can I bake the potatoes ahead?
Yes. Bake them a day ahead, chill, and reheat in a hot oven for 15 minutes before filling.
Can I use another topping?
Yes. Try kimchi, sliced avocado or a fried egg for extra richness.
