Method

  1. 1

Heat the ghee on the Sauté setting. Add the cumin and mustard seeds and let them pop for 30 seconds. Stir in the asafoetida, ginger and green chillies for 30 seconds.

  2. 2

Add the tomatoes and turmeric and cook for 3 minutes until they break down.

  3. 3

Add the rinsed rice and lentils, the water and 1 tsp salt. Stir well and scrape the bottom so nothing sticks.

  4. 4

Lock the lid and set the valve to sealing. Cook at high pressure for 8 minutes. It takes about 8 minutes to come up to pressure first.

    8 min
  5. 5

Let the pressure drop naturally for 10 minutes (natural release). A quick release can make the starchy water spit from the valve. Then open the valve and lid.

  6. 6

Stir in the peas, which will thaw in the heat, and the lemon juice. The khichdi should be soft and porridge like, so add a splash of hot water if you like it looser. Scatter with coriander.

  7. 7

No pressure cooker? Simmer everything in a covered heavy pan for 30 to 35 minutes, stirring now and then and adding a little more water if it gets thick.
