Method

  1. 1

Heat the oil in a large heavy pan over a medium heat. Add the onions with a pinch of salt and cook for 20 minutes, stirring often, until soft and golden.

  2. 2

Stir in the paprika, caraway, marjoram and garlic and cook for 30 seconds. Add the tomato purée, vinegar, bay and beef, then pour in the stock. Season well and bring to a simmer.

  3. 3

Cover and cook on a low heat for 2 hours 15 minutes, stirring now and then, until the beef is very tender and the onions have melted into a thick gravy. Add a splash of water if it gets too thick.

For the dumplings, whisk the yeast into the warm milk, then beat in the egg and salt. Stir this into the flour to make a thick, sticky batter, then fold in the bread cubes. Cover and leave somewhere warm for 30 minutes.

Wet your hands and shape the dough into two fat loaves, about 20 cm long. Lower them into a large pan of simmering salted water, cover and cook for 20 minutes, turning once halfway.

Prick the dumplings all over with a fork to let the steam out, then slice them with a bread knife or a piece of thread. Serve a few slices in each bowl with a ladle of goulash over the top.
