Method
- 1
Mix the flour and the 0.5 tsp salt in a bowl. Add the warm water and the first 2 tbsp oil and mix to a soft dough. Knead for 5 minutes until smooth, then cover and rest for 30 minutes.
30 min - 2
Peel and chop the potatoes. Boil in salted water for 15 minutes until soft, drain well and mash until completely smooth.
15 min - 3
Heat the 4 tbsp oil in a large frying pan and cook the onions over a medium heat for 15 minutes, stirring often, until deep golden. Mix half of them into the mash with the pepper and 1 tsp salt. Keep the rest warm.
15 min - 4
Roll the dough out thinly, about 2 mm. Cut out circles with a 8 cm cutter or a glass. Put a teaspoon of potato in the middle of each, fold over and pinch the edges firmly shut.
- 5
Boil a large pan of salted water. Cook the varenyky in batches. They are ready 3 minutes after they float to the top. Lift out with a slotted spoon.
3 min - 6
Serve piled up with the rest of the fried onions spooned over and a scatter of dill.
