Method

  1. 1

Make the filling: warm the jaggery and 50 ml water in a pan until melted. Add the coconut and cook over a low heat for 5 to 6 minutes, stirring, until the mixture is sticky and no longer wet. Stir in the cardamom, nutmeg and poppy seeds. Cool.

  2. 2

Make the dough: bring the 250 ml water, coconut oil and salt to a rolling boil in a pan.

  3. 3

Take off the heat, tip in the rice flour all at once and stir with a wooden spoon. Cover and leave for 5 minutes.

  4. 4

Tip onto a worktop and knead the hot dough with oiled hands for 3 to 4 minutes until smooth and soft with no cracks. Keep covered with a damp cloth.

  5. 5

Take a walnut sized ball of dough, press out into a thin cup in your palm, with the edges thinner than the middle. Put a heaped teaspoon of filling in the middle.

  6. 6

Pinch the edge into 6 to 8 pleats, bring them together at the top and pinch to seal into a point.

  7. 7

Oil a steamer basket or line with baking paper and steam the modak over simmering water for 12 minutes until shiny and firm. Brush with a little coconut oil and serve warm.
