Method
- 1
Cook your homemade Mexican chorizo (see the base recipe) in a cold pan over a medium heat for 8 minutes, breaking it up, until browned and cooked through.
8 min - 2
Warm your refried beans (see the base recipe) in a small pan with a splash of water until steaming hot.
- 3
Toss the red onion with half the lime juice and a pinch of salt and leave for 10 minutes.
10 min - 4
Warm the tostadas (see the base recipe) in the oven at 180°C (160°C fan) for 3 minutes, to refresh the crunch.
3 min - 5
Spread each with beans, add chorizo, lettuce, avocado and radish.
- 6
Scatter with the pickled onion, drizzle over the remaining lime and serve immediately.
Tips
- Assemble just before eating. Tostadas soften within a few minutes once topped.
- Squeeze lime on the avocado to stop it browning.
- Offer hot sauce on the side.
Storing and freezing
Best eaten straight away. Keep the cooked chorizo and beans separately in the fridge for up to 3 days once cooled within 2 hours, and reheat until steaming hot throughout.
Questions
Can I use shop bought tostadas?
Yes. Look for 100% corn ones, which are gluten free. Check the label, as some brands share a factory with wheat.
Can I make it lighter?
Yes. Use less chorizo, skip the beans, and add more lettuce, radish and avocado.
Is it dairy free?
Yes, as written. There is no cheese or cream, so it is also egg free and nut free.
