Heat the oil in a small pan, add the garlic and cook for 30 seconds. Add your ready made pot beans (see the base recipe) with a splash of their broth.

  3. 3

Halve the avocados, scoop the flesh into a bowl, add the lime juice and a pinch of salt, and mash roughly.

  4. 4

Split the rolls open and toast them cut side down in a dry hot pan for 1 to 2 minutes, until crisp.

    2 min
  5. 5

Spread the warm beans over the bottom half of each roll, then the avocado. Add tomato slices, red onion and lettuce.

  6. 6

Top with plenty of your ready made escabeche (see the base recipe), close the rolls and press gently. Serve warm.

Tips

  • Toast the rolls so they stay crisp against the beans. A soft roll will go soggy quickly.
  • Bolillo rolls are the traditional choice. Small crusty white rolls or ciabatta work well in the UK.
  • Add some of the pickling liquid from the escabeche to the beans for an extra tangy kick.

Storing and freezing

Eat straight away. The bean mixture keeps in the fridge for up to 3 days and can be reheated until steaming hot all the way through.
