Method
- 1
Heat the oven to 200°C (180°C fan). Roll out your ready made shortcrust pastry (see the base recipe) and line a 25 cm loose bottomed tart tin. Chill for 20 minutes, then blind bake with paper and beans for 15 minutes. Remove them and bake for 5 minutes more. Lower the oven to 180°C (160°C fan).
20 min - 2
Boil the potato cubes in salted water for 7 minutes until just tender, then drain.
7 min - 3
Warm the olive oil in a frying pan and stir your ready made soffritto (see the base recipe) for 3 minutes. Add the potatoes and cook for 3 minutes more. Cool slightly.
6 min - 4
Whisk the eggs, milk and half the parmesan with plenty of pepper. Flake the tuna into the potato mixture with the capers and parsley.
- 5
Spread the filling over the pastry case, pour over the egg mixture and scatter with the remaining parmesan.
- 6
Bake for 30 to 35 minutes until set and golden. Rest for 10 minutes before slicing, and serve warm or at room temperature.

Tips
- Choose a waxy potato so the cubes hold their shape and do not fall apart in the tart.
- Capers are salty, so rinse them and go easy on extra salt.
- Serve with a simple rocket and lemon salad to cut the richness.
Storing and freezing
Cool within 2 hours and keep in the fridge for up to 2 days. Reheat slices at 160C (fan 140C) for 12 minutes until hot through, or eat cold. Not suitable for freezing.
Questions
Can I use fresh tuna?
Yes. Sear a tuna steak for 1 minute each side and flake it, but tinned tuna is the traditional filling and gives a soft, savoury result.
Is this dairy free?
No. The pastry contains butter and the filling has milk and parmesan. Swap in dairy free baking block, unsweetened oat milk and omit the cheese for a dairy free version.
Can I add other vegetables?
Yes. A handful of peas, chopped green beans or roasted courgette all work well. Keep the total filling volume roughly the same.
