Scatter with mint, check the seasoning and serve in warm bowls.

Tips

  • Lamb shoulder suits slow cooking. Lean leg meat dries out in a stew.
  • Skim off excess fat from the surface before adding the peas if the stew looks greasy.
  • Add the mint at the end so it stays bright and fresh.

Storing and freezing

Cool within 90 minutes. Keeps 3 days in the fridge, or 3 months in the freezer. Reheat until steaming hot all the way through.

Questions

Can I use frozen peas in winter?

Yes. Frozen peas are picked and frozen quickly, so they are often sweeter than fresh ones out of season. Add them straight from frozen.

Can I use beef instead?

Yes. Use braising beef and add 30 minutes to the cooking time before adding the potatoes. Swap the mint for chopped parsley.
