Method
- 1
Heat the oven to 200°C (180°C fan). Brush the baguette slices with the olive oil and bake for 8 minutes until crisp and golden.
8 min - 2
Melt the butter in a frying pan over a medium heat. Add your ready made soffritto (see the base recipe), the sage and the anchovies and stir for 3 minutes until the anchovies melt into the pan.
3 min - 3
Add the chopped chicken livers and cook for 3 to 4 minutes, stirring, until browned on the outside.
4 min - 4
Pour in the wine and add the capers. Simmer for 8 to 10 minutes until the livers are cooked through, with no pink, and the mixture is thick.
9 min - 5
Chop everything roughly on a board for a coarse spread, or blitz for a smoother one. Season to taste.
- 6
Spoon warm onto the toasted baguette slices and serve straight away.
Tips
- Trim away green patches and sinew from the livers. They taste bitter.
- Cook the livers until no pink remains. Undercooked liver is not safe.
- Capers are salty, so taste before adding extra salt.
Storing and freezing

Questions
Can I make it ahead?
Yes. Make the spread up to 2 days ahead, keep it covered in the fridge and reheat gently. Toast the bread just before serving.
Can I make it gluten free?
Yes. Serve on gluten free bread, or spoon it onto cucumber slices or rice cakes. The spread itself is gluten free.
