Method
- 1
Coat the steak in your ready made carne asada marinade (see the base recipe) and leave it for at least 30 minutes, or up to 4 hours in the fridge.
30 min - 2
Heat half the oil in a large frying pan until very hot. Fry the poblano strips and onion for 8 minutes until charred and soft. Tip onto a plate and keep warm.
8 min - 3
Add the rest of the oil and fry the steak for 2 to 3 minutes each side until browned and cooked to your liking, then rest for 5 minutes and slice thinly. Discard any marinade left in the dish.
5 min - 4
Warm your ready made queso (see the base recipe) gently in a small pan over a low heat, stirring, until steaming. Add a splash of milk if it has thickened. Do not let it boil.
- 5
Split and toast the rolls. Pile in the sliced steak, peppers and onion and tomato slices.
- 6
Spoon over plenty of queso and close the rolls. Eat at once, with napkins.
Tips
- Slice the steak thinly across the grain for tender bites.
- Never use leftover marinade from raw meat as a sauce unless boiled for 5 minutes. It is safer to discard it.
- Toast the cut sides of the rolls so they do not go soggy.
Storing and freezing
Best eaten fresh. Keep leftover steak and peppers in the fridge for up to 2 days and reheat until steaming hot all the way through.
