Method
- 1
Put the ribs in a large pot, cover with cold water, bring to the boil and boil hard for 5 minutes. Drain and rinse the ribs well to remove the scum.
5 min - 2
Return the ribs to the clean pot with the onion, garlic, ginger and 2.5 litres of water. Bring to the boil, then simmer with the lid half on for 2 hours. The broth should turn cloudy and creamy.
120 min - 3
Fry the pork belly slices in the sesame oil for 3 to 4 minutes each side until browned and cooked through.
8 min - 4
Boil the eggs for 6 and a half minutes, cool in cold water, then peel.
6 min 30 s - 5
Strain the broth into a clean pan and stir in the soy sauce. Taste and add a little more soy if you like. Keep it hot.
- 6
Cook the noodles in boiling water for 2 minutes, or as the pack says, then drain well.
2 min - 7
Divide the noodles between four bowls and ladle over the hot broth. Top with pork, a halved egg, spring onion and sesame seeds.
