Method
- 1
Heat the oven to 250°C (230°C fan) with a heavy baking tray inside for 30 minutes.
- 2
Heat the oil in a frying pan over a high heat and cook the chicken for 6 to 7 minutes until browned and cooked through, with no pink inside.
6 min 40 s - 3
Pour in 80 ml of your ready made teriyaki sauce (see the base recipe) and simmer for 2 minutes until the chicken is glazed and sticky.
2 min - 4
Divide your ready made pizza dough (see the base recipe) in half and stretch each piece to about 30 cm on baking paper dusted with semolina. Brush with the rest of the teriyaki sauce, leaving a 2 cm rim.
- 5
Scatter over the mozzarella, chicken, sweetcorn and half the spring onions.
- 6
Slide onto the hot tray and bake for 8 to 10 minutes until golden and bubbling.
10 min - 7
Zigzag your ready made mayonnaise (see the base recipe) over the hot pizza and top with the remaining spring onion and the nori.
Tips
- Add the mayonnaise after baking. It splits in the oven and goes greasy.
- Thicken the teriyaki glaze in the pan. A thin sauce will slide off the chicken and wet the base.
- Nori is sold in the Asian foods aisle of most supermarkets. Use scissors to cut it into fine strips.
Storing and freezing
Best the same day. Cool leftovers within 1 to 2 hours, keep covered in the fridge for up to 2 days and reheat until steaming hot all the way through. Keep mayonnaise in the fridge.
Questions
Is mayonnaise on pizza normal in Japan?
Yes. Japanese pizza shops often top pizza with mayonnaise, sweetcorn, potato and teriyaki chicken. It is a very popular combination.
Can I use shop bought mayonnaise?
Yes. Japanese Kewpie mayonnaise is richer and tangier and works very well. Use about 80 ml.
Can I use pork or tofu instead of chicken?
Yes. Thin pork slices or pressed, cubed tofu take teriyaki sauce well. Cook pork until there is no pink inside.
