Method

  1. 1

Heat the oven to 220°C (200°C fan). Pat the wings very dry with kitchen paper. Toss with the baking powder and salt until lightly coated.

  2. 2

Spread the wings on a wire rack set over a baking tray, skin side up, with space between them. Bake for 25 minutes.

    25 min
  3. 3

Turn the wings and bake for 20 minutes more, until the skin is golden and crisp.

    20 min
  4. 4

Warm your ready made teriyaki sauce (see the base recipe) in a large pan for 2 minutes until bubbling.

  5. 5

Tip in the hot wings and toss until completely coated. Check the thickest wing is cooked through, with clear juices and no pink.

  6. 6

Pile on a plate and scatter with the sesame seeds and spring onions. Eat while hot, with plenty of napkins.

Tips

  • Baking powder (not bicarbonate) draws moisture from the skin and makes the wings crisp without frying. Check it is gluten free.
  • Toss the wings in the sauce after baking, not before, so the sugar does not burn.
  • Add a pinch of chilli flakes to the sauce for a gentle kick.

Storing and freezing

Keeps 2 days in the fridge, cooled within 1 hour. Reheat on a tray in a hot oven for 15 minutes until steaming hot and crisp.

Questions

Can I cook these in an air fryer?

Are they gluten free?

Yes, with the gluten free teriyaki sauce from the base recipe and gluten free baking powder. Check your sesame seeds for cross contamination if you are coeliac.
