Method
- 1
Blitz the lime and orange juice, garlic, spring onions, green pepper, the first scotch bonnet, parsley, thyme, cloves, salt and the 2 tbsp oil to a rough green paste. This is epis. Rub it over the goat, cover and chill for at least 4 hours, or overnight.
- 2
Make the pikliz. Pack the cabbage, carrot, red onion, sliced chilli and the 0.5 tsp salt into a bowl or jar, pour over the vinegar and press down. Leave for at least 1 hour. It keeps in the fridge for a week.
- 3
Put the goat and all its marinade in a large pot with the water. Bring to the boil, then cover and simmer for 1 hour 15, until tender.
75 min - 4
Drain the goat and pat it very dry with kitchen paper. Heat the frying oil in a deep frying pan until a piece of goat sizzles hard the moment it goes in.
- 5
Fry the goat in batches for about 6 minutes each, turning, until deep brown and crisp at the edges. Drain on kitchen paper.
6 min - 6
Sprinkle with a little salt and serve hot with the pikliz and rice or fried plantain.
