    27 min 30 s
  3. 3

Warm your ready made corn tortillas (see the base recipe) in a dry pan for 30 seconds each side.

  4. 4

Fill with the roast cauliflower and avocado.

  5. 5

Top with your ready made pickled red onions (see the base recipe), your creamy jalapeno cilantro sauce (see the base recipe) and coriander.

Tips

  • Cut the florets small and even for good browning and crispy edges.
  • Do not crowd the tray; use two if needed so the cauliflower roasts rather than steams.
  • A squeeze of lime over the finished tacos lifts all the flavours.

Storing and freezing

Roast cauliflower keeps 3 days in the fridge; reheat until steaming hot. Assemble the tacos fresh.

Questions

Can I use broccoli instead?

Yes, roast florets for about 20 minutes until the edges char.

Is it spicy?

Mild. The sauce adds gentle heat; add chilli flakes to the cauliflower for more.

Are these vegan?

The cauliflower and tortillas are, but the sauce contains soured cream. Use a dairy free dressing for a vegan plate.
